Sweet Potato Bisque

This is a favorite of our guests and is taken from our first cookbook, “Tea at Gypsy’s”.  The bisque makes a great first course for your holiday dinner.

Gather the following ingredients:

1 cup onion, chopped

1 clove garlic, minced

2 stalks celery, chopped

1/4 stick butter

5 cups sweet potatoes (canned)

4 cups chicken broth

1/4 tsp nutmeg

1/4 tsp cinnamon

1 1/2 cups half-and-half

2 tbsp maple syrup

salt and pepper to taste

Saute the first 4 ingredients in the butter until tender.  Puree the vegetables, potatoes, broth, and spices, and transfer to a saucepan.  Stir in half-and-half, syrup, and salt and pepper.  Heat thoroughly, but do not boil.  Garnish with a dollop of clotted cream or whipped cream and a sprinkle of cinnamon.  Serve hot.
